A versatile air-fried version of a favorite dish without any of the guilt.
This buffalo chicken has been a staple of mine since getting diagnosed with lupus. It is extremely versatile and can be eaten in wraps, salads, or just by itself.
Anti Inflammatory Gluten-Free Buffalo Chicken Bites
Ingredients
All the ingredients in this recipe are great pantry and fridge staples for anyone following an anti inflammatory protocol diet.
1 1/2 lbs. Chicken Breast (cubed)
1/2 c. Almond Flour
1 tbsp Baking Powder
1 tsp. Salt
1 tsp. Garlic Powder
1/2 tsp. Black Pepper
2-3 Egg Whites
2 tbsp. Primal Kitchen Buffalo Sauce (or to preference)
Directions
Dice 1 1/2 Lbs. of chicken breast into 1-inch cubes (Doesn't have to be perfect). Add Flour and all spices to a medium-sized mixing bowl and mix well. Add 2-3 Egg whites to a separate small mixing bowl.
Take your diced chicken and coat the chicken in the flour and seasonings, give it a nice coat and then take those pieces of chicken straight into the egg white wash you prepared in the small bowl. Then, one final coat of flour and seasonings. repeat this process for the remaining pieces of chicken. The Flour and seasonings will start to turn into a batter the more you repeat this process, but that just makes them even better!
Place the "battered" chicken onto a baking sheet and spray with Olive/Avocado oil to help crispen them up.
Pre-Heat Airfryer to 375 degrees Fahrenheit. Once the oven is heated, place the baking sheet in the air fryer for 15-17 minutes.
Once your chicken is done. Take them out of the oven and prepare a mixing bowl with 2 tbsp of Buffalo Sauce
Serve however you prefer.
